Spencer and I tried out a new soup recipe tonight and were both quite pleased with the results. It's super rich and hearty, but there's no cholesterol. You can find the recipe here, but I'll type it out as well.
1 coarsely chopped onion (or 2, if you really like onions...like us)
2 T olive oil
1 T ground cumin
1 can of chickpeas, strained & rinsed
1 can diced tomatoes
1 can of coconut milk
Season to taste with salt & pepper
*We also added chopped kale...3-4 large leaves work nicely
In soup pot, saute onion & cumin in olive oil until onion looks translucent.
Add diced tomatoes & chickpeas, and an additional can's worth of water. Simmer for 40 min, then add coconut milk.
*Spencer is NOT a bean person, but even he really liked this soup. Diced potatoes would probably work really nicely in place of the beans.
*If you are privileged enough to live near a Trader Joe's, you can find coconut milk there--it's quite good. If not, look in the Asian section at the grocery store...
